Non-alcoholic beers (NAB) are projected to surpass €30 billion globally by 2030, yet quality and microbial safety remain major hurdles. During this ‘Meet the Expert’ seminar, Prof. Dr. Scott Lafontaine will present cutting-edge research on flavour chemistry, advanced hop extracts, and hurdle technologies that improve NAB stability without compromising sensory appeal. Prof. Dr. Scott Lafontaine is Director of the University of Arkansas Center for Beverage Innovation, and Assistant Professor in the Department of Food Science, University of Arkansas, USA. He is internationally recognised for his work in beverage analytics and food chemistry, with his research tackling NAB safety, rice brewing, and crop flavour optimisation. He leads a licensed pilot brewery and collaborates with major beverage industry partners. Prof. Lafontaine is also the incoming ASBC Vice President and a regular speaker at the ASBC Brewing Summit and European Brewing Congress meetings.
